Inside the pantry canister, these round terra cotta discs keep brown sugar soft enough to scoop without chipping away at hard lumps.
A brick of hardened brown sugar slows down baking before the mixing bowl is even out. These small clay pieces soak up water, dry off with a towel, and rest right in the bag to keep moisture where it belongs. Miles Kimball has kept them in the kitchen drawer for generations of bakers.
Fired terra cotta holds clean water and lets it out slowly into the container. It needs only a quick rinse between uses, without dish soap that might leave a scent behind on dry pantry goods.
Soak the round in water to keep raisins, dried fruit and soft cookies from going stale. Dropped in dry, the same piece draws extra dampness away from salt shakers, spices and bags of pretzels.
Each disc slips into an airtight jar or right through the top of the original paper bag. It takes up almost no room in the crock, leaving plenty of space for measuring cups to dip in.
We include enough discs to tend to the baking cupboard all at once. Put one in the dark brown sugar, one in the light, and keep another ready for the marshmallow bin.
